Tom and I have been making peanut brittle as Christmas gifts to send to our widely scattered family for a few years now. Each year we modify (and hopefully improve) our recipe. Here is the latest evolution:
Tom and Al's Peanut Brittle Candy
Ingredients
1 lb raw peanuts
3 cup sugar
1 cup water
1/2 cup corn syrup
4 T butter
1/2 tsp salt
1 tsp vanilla
1 tsp baking soda
Cook sugar, water, and syrup, stirring constantly until temperature reaches 235F. Add the peanuts, salt, and butter and cook, stirring constantly until temp reaches 300F. Add the vanilla and baking soda and stir rapidly; brittle will foam. Pour out and spread the mixture on a well-buttered, cool stone slab (we use a piece of marble). Wait a few minutes and "lift" the brittle (use a couple of spatulas) as it cools to prevent sticking. When cool, break the brittle into bite-sized pieces.
Makes about 2 lb. and 11 oz. of brittle
