Peanut Recipes

Roasting Raw Peanuts

Conventional Oven Roasting (Parching)
Place raw Virginia peanuts, in shell or shelled, one layer deep in a shallow baking pan. Roast in a 350° F oven--15 to 20 min. for shelled and 20 to 25 min. for in shell peanuts. Remove from heat just short of doneness desired as peanuts continue to cook as they cool.


Microwave Oven Roasting:

    1 c. raw shelled peanuts cold water 1/2 t. salt

Pour peanuts into colander or wire basket and wet thoroughly. Sprinkle with salt. Pour into small microwave safe casserole or pie plate. Microwave for 2 1/2 min.; stir, microwave 2 1/2 min. longer. Peanuts will be crisp when cool. Caution: Necessary cooking time may vary with ovens; remember, peanuts continue to cook as they cool.

Frying in Oil:

    2 c. raw shelled red skin or blanched VA peanuts 1 1/2 c. cooking oil or enough to cover peanuts

In an electric skillet, deep fryer or heavy saucepan, heat oil to 350° F. Add peanuts and cook, stirring occasionally, for about 5 min. or until just under doneness desired (they continue to cook as they cool). Drain on paper. Season immediately to taste.

Peanut Granola

      3/4 cup brown sugar 1/4 cup water 1/4 cup peanut butter 1 tablespoon vanilla extract 4 cu

Boiled Peanuts

8 qt. Water 3 c. salt 3 lb. raw peanuts in shell Optional: Crab Boil, or hot pepper to taste

Combine water, salt, and desired seasoning, bring to a boil. Add peanuts. Cook on low for 3-4 hr. Strain. Remove peanuts from shells. Can be eaten hot or cold.

 

 

Peanut Granola

3/4 cup brown sugar 1/4 cup water 1/4 cup peanut butter 1 tablespoon vanilla extract 4 cups old fashion oats 1/2 cup coconut 1/2 cup sunflower seeds 2 cups roasted Virginia Favorites peanuts 1 cup raisins 1 teaspoon salt 1 tablespoon cinnamon 1 egg

Combine brown sugar, water, peanut butter in microwave safe container and heat on high 11/2 minutes to 2 minutes. When sugar mixture is heated remove and add the vanilla. Meanwhile combine the rest of the ingredients except egg in large bowl. Pour the sugar mixture over dry ingredients and mix well. Add the egg if you want more of a crunchy texture. Bake 325 degrees for about 30 to 40 minutes stirring every 10 minutes to prevent burning or sticking. Let cool, the granola will hard when cool, and add favorite dried fruit if desired. Keep in airtight container for 2 weeks. Great snack for kids.

 

 

Chocolate Caramel Peanut Butter

6 HERSHEY’S caramel kisses (can be more or less depending on how much you want) 12 cracked peanuts (more of less depending on how much peanut butter you want)

Directions: 1.melt caramel kisses in microwave for about 2 mins. 2.Grind all peanuts together until almost creamy 3.stir in chocolate caramel until creamy. Ready to serve
